Quick pickled onion

Ingredients

1 red onion, finely sliced

3-4  tbsp vinegar (any vinegar you like)

1 tsp of honey (or sugar)

 ½ tsp salt

Method

Add the onions, vinegar, honey and salt to a container (I use an old honey jar) and mix well until the onions go slightly pink and are coated with the vinegar. That's it! It keeps for 1 week in the fridge.

Other flavours: You can make it your own and add extra ingredients like mustard seeds, fennel seeds, or try Yotam Ottolenghi's version with lime juice or sumac. It sounds delicious!
